Lemon chicken and rice recipe

You will need:-

  • Skinned chicken breasts for the amount of diners
  • Juice of 2-4 lemons, depending on how lemony you like the juice/gravy
  • 1 tsp dried mint
  • 1 tsp dried parsley
  • 2-4 tsp dried chives.
  • 1 pint chicken stock
  • Thickening agent ( cornflour, arrowroot )
  • Rice for the amount of diners
  • Salt and pepper to taste.

Into the chicken stock, add the herbs, salt and pepper. Put into a large casserole dish and bring to the boil. Simmer for about 20 mins.

Add the chicken breasts.

Cook for about 1 hour.

Remove chicken to a warm plate.

Add the thickening agent and bring back to the boil. Add the chicken and cook for a further 10 mins.

Serve the chicken on a bed of fluffy rice and pour the lemon gravy over the top.
