Put that extra Xmas ham in the freezer, wrapped well - You can use it in soups, to make sandwhiches, or to make another dinner. Leaving all that ham in the fridge leftover it will go to waste. Freezing it will save it for later.
You can also freeze the carcasses and bones, so that I always have something on hand to make a stock for when I want to make soups and broth.
